It's not impossible to replace the battery - https://www.ifixit.com/Guide/Samsung+Galaxy+S10e+Battery+Rep... - it's just a bit of a pain.

And, yeah, it probably does compromise the waterproofing.

Yeah, I just replaced mine a couple weeks ago. It wasn't hard, but it wasn't easy either.
